Chocolate Chip Cookies

This is the third recipe in a 12 part series to create the perfect holiday meal this season. I hope you enjoy and use these recipes for your dinner table this year.

1/2 cup coconut sugar
1/4 cup coconut oil
1/2 teaspoon baking soda
2 cups almond flour
2 eggs
1 tablespoon vanilla extract
1 cup chocolate chips

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
2. Combine coconut sugar, coconut oil, baking soda, and salt in a large bowl; beat with a handheld electric mixer until smooth. Add almond flour, eggs, and vanilla extract. Beat dough at medium speed, scraping the bottom and sides of the bowl, until well mixed, about 1 minute.
3. Fold chocolate chips into the dough. Then, drop tablespoonfuls of dough onto the baking sheet. I used a scoop to make them all size.
4. Bake in the preheated oven until golden brown, 10 to 12 minutes. Let cool on the baking sheet, about 10 minutes.

Cook's Notes:
I chose to use dairy free dark chocolate chips, but you could choose any kind of mix ins!
