Guilt Free Moist Chocolate Brownies

These brownies are super quick to make and only requires a few ingredients! It is a hit for an easy dessert that you don't have to feel guilty about! This recipe is also gluten and dairy-free!

Ingredients:
1 medium zucchini, shredded (equal to 1.5 cups shredded zucchini)
2 eggs, whisked
¾ cup any nut butter you like, I used peanut butter
1/2 cup raw honey or syrup
¼ cup unsweetened cocoa powder
1/2 cup mini semi-sweet chocolate chips. I used the enjoy life brand
2 tablespoons coconut flour
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
pinch of salt

Directions:
1. Preheat your oven to 375 degrees.

2. Shred your zucchini

3. Once your zucchini is shredded, you need to remove the excess liquid. And zucchinis have a lot of it. What I did was place a couple of paper towels down on the counter, throw the zucchini on top, then place another paper towel on top of the zucchini then squeezed. Do this until most of the liquid is removed.

4. Put the zucchini and all the other ingredients into the bowl and mix, its that easy!

5. Pour your ingredients into a loaf pan.

6. Place in oven to bake for 30-40 minutes or until toothpick comes out clean when you poke it. Mine took almost 35 minutes to completely cook through.

7. Let cool, cut, and serve!

Cook's Notes:
You can use any nut butter you like or have on hand! I used the enjoy life chocolate chips to make this dairy-free, but any kind would work! You could also switch it up and add in nuts or dried fruit! Get creative :)
